MINNEAPOLIS — Today on "What's for Breakfast" on the KAXE Morning show, we got to chat with Julia Schrenkler. She didn't have breakfast yet because she needed to bring her car to the mechanic, but she told us her plans.
Julia made a hash recipe that she calls "opportunity hash," with boiled potatoes, sweet potatoes, peppers, leftover pulled pork and fried eggs. It's a pretty simple breakfast to make, as it just requires having the ingredients prepared beforehand.
"We're an ingredient household. I prep ingredients, but I don't actually make a meal.... Having stuff ready to go makes assembly a snap," Julia said.
For the beverage, Julia told us that she's had four cups of coffee this morning. This isn't a common pattern, but she was dealing with "shenanigans with the mechanic." Julia said there was too many things that went wrong with the car to explain, but in the end it was all sorted out. The waiting room there is where she got some of her coffee, served in the finest styrofoam cup.
We also chatted about the recent funding cuts at KAXE. Julia told us that KAXE matters to her, as even though she doesn't live in the area, public radio is a great source of information and culture. She tunes in because she enjoys KAXE's personality.
