GRAND RAPIDS — Often times, people call in to "What's for Breakfast" on the KAXE Morning Show with simple breakfast items. This week, our caller Amanda Lussier wanted something more elaborate.
Amanda told us about a recipe she got from her Filipino mom: garlic fried rice with a fried egg and fresh tomatoes topped with a soy sauce and vinegar marinade, plus some bacon.
On the day she called, Amanda and her husband Kyle were about to open a new restaurant in Grand Rapids called The Pines. They have been thinking of doing this since the COVID-19 pandemic. After dealing with fluctuating job conditions in the Twin Cities, they eventually decided to make the move to Grand Rapids.
Amanda and Kyle worked a number of jobs around Grand Rapids, including True North Salon and Rapids Brewing. This let them get involved in the community, which opened the door to them opening their own restaurant.
There have been a lot of challenges, but Amanda and Kyle feel prepared for whatever comes their way.
Finally, Amanda told us why she listens to KAXE. She told us she loves community radio and has friends at the station. She enjoys listening after getting off of work late, specifically the "After Dark" program on Saturday nights. Amanda is also looking forward to the Grand Rapids Riverfest this fall.
